RESPONSIBILITIES

  • Researching and understanding the market to capture trends and thereby create new dishes that are suitable and meet customer tastes.
  • Change and refresh the menu quarterly - annually or according to actual projects. Coordinate with related departments to set up standard documents, implementation manuals and conduct focused training to develop new dishes for the Chefs at restaurant branches
  • In charge of managing food costs, making quantitative documents of ingredients, calculating and controlling costs, optimizing selling prices and profits while ensuring the quality of dishes in accordance with economic orientation of the company‘s revenue
  • Support the test dishes when interviewing and evaluating recruitment positions in the kitchen. Cooperate with the purchasing team and the QA/QC team to monitor and control the quality of input materials, ensuring that the required standards are fully answered.
  • Systematize the production process and combine similarly with the Central Kitchen to give the optimal plan for the Building Block (Restaurant)
  • Perform other reports and statistics as required
  • In charge of other tasks as assigned by the Direct Manager

REQUIREMENTS

  • Graduated from Intermediate or higher in Japanese kitchen or other related professional
  • Having 3 or more years of experience in the position of Chef, Kitchen Manager, Food Development and Creation,... or similar positions. Preference will be given to candidates with experience working in resort systems, restaurant chains,...
  • Good professional skills in Japanese cuisine, extensive knowledge of many product lines, many dishes suitable for the Vietnamese market
  • Skilled in creating new menus, improving and developing dishes according to market trends and demands
  • Good and smart creative skills are typical of the restaurant chain model to come up with suitable new products
  • Ability to analyze, quantify, calculate costs and optimize business performance
  • Able to communicate effectively and have good team spirit. Have a good service mindset and be open to feedback
  • Good communication in Japanese or English is a plus
